Individual coffee cakes are a breeze with this coffee cake muffins recipe. The single rise yeast cakes are easy to make and taste wonderful with, or without, icing.
 

Ingredients

  • 1 packet active dry yeast
  • 1 cup warmed milk (105 to 115 degrees f)
  • 1/2 cup butter
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 egg yolks
  • 2 cups flour, sifted
  • 1/2 cup heavy cream

Directions

  1. 1. Mix the yeast with the warmed milk; stir until fully dissolved. Cover and let stand for 10 minutes.
  2. 2. Cream the butter, sugar and salt; add the eggs and egg yolks one at a time, beating well after each addition.
  3. 3. To the dissolved yeast, add three tablespoons of flour and mix well. Combine with the sugar/egg. Add the remaining flour and cream alternately.
  4. 4. Grease and flour two standard 12 count muffin tins; fill the cups 2/3 full of dough.
  5. 5. Set pan in a warm place until dough has risen to the tops of the pans.
  6. 6. Bake at 400 degrees F for about 25 minutes.
