Consomme is a type of clear soup that is very easy to make. It can be used as a broth for many different applications.
 

Ingredients

  • 1 pint cold water
  • 1 pint chicken stock
  • 1 teaspoon peppercorns
  • 1 teaspoon salt
  • 1/2 teaspoon sweet herbs
  • 1 tablespoon diced celery
  • 1 tablespoon diced carrot
  • 1 tablespoon diced onion
  • 1 sprig parsley

Directions

  1. 1. Cut vegetables into small pieces. Combine all of the ingredients in a kettle, heat slowly to boiling and then simmer for three to four hours.
  2. 2. Strain the soup and discard the solids.
