The richness of cream cheese with sweet flavorings and topped with pie filling, this cream cheese cupcake recipe makes a truly decadent treat.
 

Ingredients

  • 3 packages (8 ounces each) cream cheese
  • 5 eggs
  • 1 cup sugar
  • 1 1/2 teaspoons vanilla
  • For topping:
  • 1/2 pint sour cream
  • 1/4 teaspoon vanilla
  • 1/2 cup sugar
  • 1 can cherry or strawberry pie filling

Directions

  1. 1. Note: For calorie/fat conscious readers, low fat cream cheese, sour cream and egg substitutes can be used.
  2. 2. Preheat oven to 300 degrees F. Prepare cupcake pan with cooking spray.
  3. 3. Have cheese and eggs at room temperature. Blend cream cheese thoroughly and add eggs one at a time. Gradually add sugar and vanilla.
  4. 4. Fill cupcake wells up to 1/4 inch of top. Bake for 40 minutes or until top cracks. Remove from oven and cool for five minutes.
  5. 5. To Make the topping: Mix sour cream, vanilla and sugar. Spread on top of cupcakes and bake for five minutes. Top with pie filling and refrigerate.
