Ingredients

• Pudding mix:
• 3/4 cup all purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1/2 teaspoon ground nutmeg
• 1 teaspoon ground cinnamon
• 1/4 teaspoon mace
• 1/4 pound suet (or unsalted butter), chopped small
• 1 cup brown sugar
• 1/4 cup heavy cream
• 1/4 cup apple cider
• 2 eggs, well beaten
• Fruit mixture:
• 1 cup seedless raisins
• 1 1/2 cup dried currants
• 2 cups candied fruit, chopped
• 1/2 cup almonds, chopped
• 2 tablespoons brown sugar
• 1/4 cup all purpose flour
• 1 cup bread crumbs

Directions

1. 1. Note: Suet is the fat found around the kidneys and loins in beef and mutton. It lends a rich flavor to puddings that can not be duplicated by other products. Because it is pure fat you don't want to eat it very often but once a year in traditional puddings is acceptable. If you absolutely have to, you can substitute real butter.
2. 2. Pudding mix: Sift together the flour, baking soda, salt, nutmeg, cinnamon and mace.
3. 3. Mix in the suet, brown sugar, cream, cider and eggs; mix well.
4. 4. Prepare the fruit mixture: Combine the raisins, currants, candied fruit and almonds with brown sugar, flour and bread crumbs; mix well.
5. 5. Add the fruit mixture to the pudding mix; stir to fully incorporate.
6. 6. Transfer the pudding to a greased and floured two quart pudding mold, or two 1 pound coffee cans.
7. 7. Cover with two thicknesses of wax paper allowing space for pudding to rise; seal tightly around the top with a rubber band or string.
8. 8. Place on rack in a large pot or Dutch oven with a tight fitting lid. Pour in enough boiling water to come half way up the side of the mold; cover.
9. 9. Bring the water to a boil, reduce heat to simmer and cook for 2 1/2 hours.
10. 10. Remove the pudding from the mold and slice.
11. 11. Serve hot with hard sauce (be sure to look up our recipe for it).
