Here's an easy cupcakes recipe the whole family can have fun making. These chocolate cupcakes can be enjoyed with or without frosting.
 

Ingredients

  • 1 box chocolate pudding powder (cook and serve)
  • 1/2 cup nonfat dry milk
  • 1 tablespoon unsweetened cocoa
  • 1/2 cup sugar (or sugar substitutue)
  • 1 cup self rising flour
  • 1/4 teaspoon baking soda
  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla
  • 4 ounces applesauce

Directions

  1. 1. Preheat oven to 350 degrees F. Prepare a cupcake pan with paper liners.
  2. 2. In medium mixing bowl combine pudding powder, dry milk, cocoa, sugar, flour and baking soda. Set aside.
  3. 3. In a mixing bowl combine the egg whites with the cream of tartar. Using an electric mixer beat the egg whites until they are stiff.
  4. 4. Use a rubber spatula to fold the vanilla and applesauce into the egg whites. Then fold the egg white mixture into the flour/coca mix.
  5. 5. Divide batter equally between the cupcake wells. Bake for 18 to 20 minutes or until tester comes out clean.
  6. 6. Cool in pan on wire rack for 10 minutes then remove.
