Frozen Pineapple Citrus Salad

Molded in a milk carton, this wonderful frozen pineapple citrus salad is sliced and served. Be sure to look up our recipe for fruit salad dressing and use that as a topper.
 

Ingredients

  • 9 ounces sliced pineapple, drained (reserve syrup)
  • 1/2 cup butter
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • Pinch salt
  • 1 egg, slightly beaten
  • 2 tablespoons lemon juice
  • 3/4 cup orange sections, cut into 1/2 inch pieces
  • 1/2 cup maraschino cherries, drained, cut into quarters
  • 1/4 cup pecans, chopped
  • 12 marshmallows, chopped (or use mini marshmallows)
  • 2 cups whipped topping

Directions

  1. 1. Measure pineapple juice into measuring cup; add water to make 1 cup liquid.
  2. 2. Melt butter over very low heat; blend in a mixture of flour, sugar and salt. Add pineapple liquid gradually, stirring constantly until mixture is thickened and smooth.
  3. 3. Remove from heat and stir several tablespoons of hot mixture into beaten egg. Add to thickened sauce; cook over simmering water for three or four minutes, stirring constantly. Stir in lemon juice. Chill.
  4. 4. Toss together the pineapple, cut into small cubes, orange sections, maraschino cherries, nuts and marshmallow pieces.
  5. 5. Blend together the pineapple juice mixture and whipped cream; fold into fruit until well blended.
  6. 6. Spoon into two 1 1/2 pint freezer cartons; freeze until firm.
  7. 7. Remove the carton from the freezer and allow to soften slightly. Remove from carton or cut carton away from mold.
  8. 8. Cut into slices and serve as a salad on a bed of greens, or serve plain as a dessert.
  9. 9. Drizzle our fruit salad dressing (please look up our recipe) generously over the top and serve.
