Here's a lovely dessert idea for themed parties. You can substitute other flavorings, colors, molds or shaped cutters to produce a customized treat.
 

Ingredients

  • 6 envelopes knox gelatine
  • 1 cup sugar (or substitute)
  • 1/2 cup water
  • 1/2 teaspoon mint extract
  • 3 drops green food colouring

Directions

  1. 1. Combine all of the ingredients in a sauce pot and cook, stirring regularly, over low heat until well melted and blended (about five minutes).
  2. 2. If you are using aspartame, blend the sweetener in after cooling the cooked gelatine mixture somewhat by stirring it for a few minutes off the heat.
  3. 3. Pour into a baking pan, or on a plate, and let cool completely in refrigerator.
  4. 4. When the gelatin has solidified use a leaf shaped cutter to cut out designs. You can also use a shamrock shaped cutter or any other desired form.
