Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 teaspoon vanilla
  • 1 large egg, lightly beaten
  • 1/3 cup old fashioned rolled oats
  • 1/2 cup raisins
  • 2/3 cup walnuts, coarsely chopped

Directions

  1. 1. Preheat the oven to 350 degrees F. Butter three cookie sheets.
  2. 2. Sift the flour, baking soda and salt into a large bowl.
  3. 3. Beat the butter and granulated and brown sugars in a large bowl with an electric mixer at high speed until creamy. Add the vanilla and egg, beating until just blended. Mix in the dry ingredients, oats, raisins and peanuts.
  4. 4. Drop heaping teaspoons of the dough about two inches apart on to the prepared cookie sheets.
  5. 5. Bake one sheet at a time for 12 to 15 minutes or until lightly browned. Let cool on the pans until slightly firmed then transfer to wire racks to cool completely.
