Finnan Haddie, named for the fishing village of Finnan or Findon in Scotland, is a name that is synonymous with smoked haddock and is used quite often in this haddock rarebit recipe.
 

Ingredients

  • 1 cup milk
  • 1 tablespoon butter
  • Salt and cayenne pepper to taste
  • 1/2 teaspoon paprika
  • 1 teaspoon dry mustard
  • 1 cup cheddar cheese, grated
  • 1 cup cooked haddock, flaked
  • Toast or bread croustades

Directions

  1. 1. Heat the milk over medium heat, do not let it boil.
  2. 2. Add the butter, salt, cayenne pepper, paprika and mustard; stir to combine.
  3. 3. Add the cheese. Stir constantly until the cheese is melted and the sauce is smooth.
  4. 4. Add the haddock and stir to combine thoroughly.
  5. 5. Serve on toast or bread croustades.
