Hazelnut Cookies with Chocolate Glaze

Deck the halls with cookies. Especially these hazelnut cookies with chocolate glaze. Be sure to leave a couple for Santa along with a glass of milk.
 

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/2 cup packed dark brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/8 cups all purpose flour
  • 1/2 teaspoon baking soda
  • Pinch salt
  • 1 cup vanilla or white chips
  • 1 cup chopped hazelnuts, toasted
  • For the chocolate glaze:
  • 3/4 cup semisweet chocolate chips
  • 3 tablespoons butter
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon vanilla extract

Directions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. In a large mixing bowl cream the butter, brown sugar and granulated sugar. Add the egg and vanilla; mix well.
  3. 3. Sift together the flour, baking soda and salt; add to creamed mixture and mix well. Stir in chips and nuts.
  4. 4. Shape into 1 1/2 inch balls; place on greased baking sheets and flatten to 1/2 inch thickness with a glass dipped in sugar.
  5. 5. Bake for 10 to 12 minutes or until lightly browned. Transfer from oven to a wire rack to cool.
  6. 6. While the cookies are cooling combine the chocolate chips, butter and corn syrup in a double boiler over hot, but not boiling water. Stir until chips are melted and mixture is smooth then add vanilla; mix well.
  7. 7. Drizzle the glaze over the tops of the cookies. Let the glaze set completely before serving.
