A very popular dish in the U.S., this Hooters pasta salad - copycat recipe, is very easy to make. The textures and colors make it a very appetizing side dish, or light lunch or dinner.
Ingredients
- For the dressing:
- 2/3 cup vegetable oil

- 1/3 cup red wine vinegar

- 1 1/2 tablespoons sugar

- 1 tablespoon dijon mustard

- 2 teaspoons minced shallot

- 1 teaspoon lemon juice

- 1/2 teaspoon dried thyme

- 1/4 teaspoon dried parsley flakes

- 1/4 teaspoon garlic powder

- 1/8 teaspoon salt

- 1/8 teaspoon coarsely ground black pepper

- 1/8 teaspoon dried basil

- 1/8 teaspoon dried oregano

- 1/8 teaspoon onion powder

- For the pasta salad:
- 4 quarts water

- 1 pound tri color spiral pasta

- 1 or 2 teaspoons vegetable oil

- 1 large tomato, seeded and diced

- 1 green onion stalk, chopped

- 1/4 cup cucumber, minced

- Salt to taste
