While lefse, a round flatbread of Norwegian origin, is traditionally made from a mashed potato dough this recipe cuts a corner and uses instant mashed potatoes.
 

Ingredients

  • 7 ounces instant potato flakes
  • 2 teaspoons salt
  • 1 tablespoon butter
  • 1 cup milk
  • 1 cup boiling water
  • 1 1/2 cups flour

Directions

  1. 1. Place instant potato flakes, salt and butter in a mixing bowl.
  2. 2. Add the boiling water to the milk and then add the liquid to the potato mixture. Whisk quickly until thick and smooth.
  3. 3. Add enough flour to be able to handle the dough; knead lightly.
  4. 4. Form into balls and roll into thin circles on a floured board.
  5. 5. Cook pancake style on an electric grill or in a skillet on a stove top, turning to brown both sides.
