Break out the bread machine and fetch a bottle of chianti. Fresh Italian bread is coming to a kitchen near you.
 

Ingredients

  • 2 cups unbleached all-purpose flour
  • 1 1/2 teaspoons light brown sugar
  • 2/3 cup warm water (about 110 degrees f)
  • 3/4 teaspoon salt
  • 3/4 teaspoon olive oil
  • 1/2 package active dry yeast
  • 1 tablespoon cornmeal
  • 1 egg
  • 1 tablespoon water

Directions

  1. 1. Preheat oven to 375 degrees F.
  2. 2. Put the first six ingredients in the bread machine pan. Select dough cycle and start.
  3. 3. Deflate the dough and turn it to a lightly floured surface. Place it seam side down on a cutting board sprinkled with cornmeal. Cover the loaf with a damp cloth and let rise, until doubled (about 40 minutes).
  4. 4. Beat the egg and water in a separate bowl and brush the loaf with the egg mixture. Make a single long and quick cut at the center of the loaf with a sharp knife.
  5. 5. Place the loaf on a sheet pan and bake for 30 to 35 minutes (oven times will vary).
