The tangy sweetness of a key lime cheesecake is an excellent way to end a meal. Or eat it as a snack while listening to the Beach Boys sing "Kokomo."
 

Ingredients

  • For the crust:
  • 1 3/4 cups graham cracker crumbs
  • 5 tablespoons butter, melted
  • 1 tablespoon sugar
  • For the filling:
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup fresh lime juice, about 5 limes
  • 3 eggs
  • Whipped cream

Directions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Combine crumbs, butter and 1 tablespoon sugar in a bowl. Stir well to coat all crumbs. Keep it crumbly. Press the crumbs onto the bottom and half way up the sides of an 8 inch spring form pan. Bake crust for five minutes. Remove from oven and set aside.
  3. 3. In large bowl combine cheese, sugar and vanilla. Mix with electric mixer until smooth. Add the lime juice and eggs and continue to beat until smooth and creamy.
  4. 4. Pour filling into crust and bake for 60 to 70 minutes or until top turns to light brown. Remove from oven and allow it to cool to room temperature then refrigerate.
  5. 5. When the cake is completely chilled remove the pan sides and cut.
  6. 6. Serve with whipped cream.
