This easy one-skillet lamb chops with mushrooms recipe produces tasty chops served up with a beef and red wine sauce.
 

Ingredients

  • 2 tablespoons olive oil
  • 8 lamb chops
  • Salt and black pepper to taste
  • All purpose flour as needed
  • 8 ounces mushrooms, sliced
  • 6 green onions, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup beef stock
  • 1/2 cup dry red wine

Directions

  1. 1. Heat the olive oil in a large skillet over medium high heat.
  2. 2. Season the lamb chops with salt and pepper; lightly coat with flour and put them in the hot skillet. Sear each side, turning once, until well browned. Transfer to a platter until needed.
  3. 3. Reduce the burner to medium heat. Add the mushrooms, green onions, garlic and butter. Cook, stirring regularly, until the onions are soft and translucent. Add the beef stock and red wine; simmer until reduced by about a third.
  4. 4. Add the lamb chops and cover the skillet. Cook for about 15 to 20 minutes or until lamb chops are done as desired.
