Here's a simple marinade for cornish game hens that will set the birds up for grilling. Its an entree that goes well with wild rice and a green vegetable.
 

Ingredients

  • 2 cornish game hens (1 1/2 pounds each), halved
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/3 cup fresh lemon juice
  • 1 green onion, minced
  • 3 tablespoons fresh cilantro, chopped
  • 2 garlic cloves, minced

Directions

  1. 1. Rub game hens with coriander and turmeric. Set aside.
  2. 2. Combine remaining ingredients in medium baking dish. Add game hens to marinade and turn to coat. Cover and refrigerate for 6 hours or overnight.
  3. 3. Prepare grill (medium high heat) or preheat broiler.
  4. 4. Remove game hens from marinade, season with salt and pepper. Grill or broil until cooked through, turning and basting occasionally with marinade; approximately 25 minutes.
