Ingredients

  • For the crust:
  • 2 cups fine zwieback crumbs
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup melted butter
  • For the filling:
  • 4 eggs
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 teaspoons grated lemon rind (zest)
  • 1 cup cream or evaporated milk
  • 1 1/2 pounds cottage cheese
  • 4 tablespoons flour
  • 1/4 cup chopped nuts

Directions

  1. 1. Preheat oven to 350 degrees F. Prepare a nine inch springform pan with cooking spray and line the bottom and sides with parchmemnt paper.
  2. 2. Mix the crumbs with 1/2 cup sugar, cinnamon and butter. Set aside 3/4 cup of the mixture to sprinkle over top; press the remainder into the prepared spring form pan.
  3. 3. Beat eggs with remaining 1 cup sugar until light; add salt, lemon juice, zest, cream, cottage cheese and flour; beat thoroughly and strain through a fine sieve.
  4. 4. Pour into lined pan, sprinkle with nuts and the reserved crumb mixture.
  5. 5. Bake for about one hour or until center is set. Turn off heat, open oven door; let stand in oven one hour or until cooled.
