Cream cheese brightened with lemon zest makes for a delicious cookie that's just the thing for snacks or dessert.
 

Ingredients

  • 1 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 tablespoon lemon peel, grated
  • 2 cups all purpose flour
  • Sugar

Directions

  1. 1. Beat butter and cream cheese in large bowl with electric mixer on medium speed. Stir in sugar and the lemon peel (zest).
  2. 2. Gradually stir in flour. Cover and refrigerate about two hours or until firm.
  3. 3. Preheat oven to 375 degrees F.
  4. 4. Shape dough into one inch balls. Place about two inches apart on ungreased cookie sheet.
  5. 5. Flatten to about 1/4 inch thickness with drinking glass that has been dipped into sugar.
  6. 6. Bake for seven to nine minutes or until set but not brown. Transfer from cookie sheet to wire rack.
