Lemon Lime Cookies

A liberal use of zest insures full flavors in this recipe for lemon lime cookies. Serve them with lemonade or iced tea and cool off on a hot day.
 

Ingredients

  • 1 cup sugar
  • 2/3 cup shortening
  • 1 tablespoon lemon peel, grated
  • 2 tablespoons lemon juice
  • 2 teaspoons lime peel, grated
  • 1 tablespoon lime juice
  • 1 egg
  • 1 3/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • For lemon lime frosting:
  • 2 cups powdered sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon lime peel, grated
  • 1 tablespoon lemon juice
  • 2 teaspoons water

Directions

  1. 1. Heat oven to 375 degrees F.
  2. 2. Beat sugar, shortening, lemon peel, lemon juice, lime peel, lime juice and egg in large bowl with electric mixer on medium speed. Stir in flour, baking powder, baking soda and salt.
  3. 3. Drop dough by rounded tablespoonfuls about two inches apart onto ungreased cookie sheet.
  4. 4. Bake 10 to 15 minutes or until edges are golden brown.
  5. 5. Let cool for five minutes; transfer from cookie sheet to wire rack. Let cool completely.
  6. 6. To make the lemon lime frosting, mix all ingredients until smooth and spreadable.
  7. 7. Top the cookies with lemon lime frosting.
