Maple sugar cookies are extremely popular in the New England area although with the advancement of mapleine and other maple derivatives, they're being regularly made in other parts of the country as well.
 

Ingredients

  • 5 cups cake flour
  • 2 teaspoons salt
  • 5 teaspoons baking powder
  • 1 cup solid shortening (or butter)
  • 2 cups maple sugar, sifted
  • 4 eggs, beaten
  • 1 teaspoon lemon extract
  • 2 tablespoons milk
  • Maple sugar for sprinkling

Directions

  1. 1. Note: If maple sugar is not available use brown sugar and add 1/2 teaspoon of maple flavoring for every two cups of sugar.
  2. 2. Sift together the flour, salt and baking powder.
  3. 3. Cream the shortening and sugar. Add the eggs, lemon extract and milk. Add the dry ingredients, a little at a time, until all is well combined.
  4. 4. Drop by teaspoonfuls on to a greased cookie sheet, flatten with a fork or glass and sprinkle with maple sugar.
  5. 5. Bake at 350 degrees F for 12 minutes.
