A variation on egg drop soup, this recipe has savory flavors to compliment any occasion or meal. It is a great way to give your best wishes to newlyweds.
 

Ingredients

  • 10 cups chicken stock (be sure to look up our recipe for it)
  • 1/4 cup white wine
  • Salt and freshly ground black pepper to taste
  • 2 large eggs, beaten
  • 2 tablespoons water
  • 1 cup parmigiano reggiano cheese, freshly grated
  • Zest of 1/2 large lemon
  • Pinch of nutmeg, freshly grated

Directions

  1. 1. In a four quart saucepan, simmer the stock and wine for five minutes, partially covered. Season with salt and pepper.
  2. 2. Meanwhile in a mixing bowl, blend the eggs, water, cheese, lemon zest and nutmeg.
  3. 3. Take the soup off the heat. With a fork, gently stir in the egg mixture with long slow strokes, to lengthen the shreds, until it firms into pale wisps floating in the soup. This should take half a minute at the most.
  4. 4. Taste the soup for seasonings and adjust as necessary; serve while the soup is still hot and fragrant.
