While the cheeses in these veggie burgers keep them from being vegan they do add layers of flavor. The bulgur wheat, oats and rice provide plenty of protein.
Ingredients
- 1/4 cup boiling water

- 2 tablespoons bulgur wheat

- 1 pound mushrooms, quartered

- 1 cup onion, diced

- 1/2 cup water

- 1/2 cup rolled oats

- 2/3 cup brown rice, cooked

- 1/2 cup low fat mozzarella cheese, shredded

- 2 tablespoons low fat cheddar cheese, shredded

- 2 tablespoons low fat cottage cheese

- 1/2 teaspoon garlic powder

- Salt and pepper to taste

- 2 tablespoons cornstarch

- Olive oil cooking spray
