Ingredients

  • 1 pound ground beef
  • Salt and black pepper to taste
  • 1 cup onion, chopped
  • 1 cup cornmeal
  • 3 large eggs
  • 1/2 teaspoon baking soda
  • 3 tablespoons bacon drippings
  • 1 cup sweet milk
  • 1 teaspoon salt
  • 1/2 pound american cheese, grated
  • 3 jalapeno peppers, finely chopped

Directions

  1. 1. Put the ground beef in a skillet over medium high heat; add salt, black pepper and onion. Cook until no pink remains in the meat. Remove from heat and drain off the grease.
  2. 2. Make the batter by mixing together the cornmeal, eggs, baking soda, drippings, milk, and salt. Mix well.
  3. 3. Grease a 9 by 13 inch baking dish. Add half of the batter then sprinkle on the meat, peppers and cheese. Cover with remaining batter.
  4. 4. Cook at 350 degrees F for about 45 minutes.
