Ingredients
- For the spice mixture:
- 2 teaspoons freshly grated orange peel (zest)

- 1 teaspoon garlic powder

- 1 teaspoon ground coriander

- 3/4 teaspoon ground cinnamon

- 1/2 teaspoon salt

- 1/4 teaspoon ground white pepper

- 1/8 teaspoon ground cardamom (or cloves)

- 1/8 teaspoon cayenne pepper

- For roasting:
- 1 roasting hen, capon or small turkey

- 1 or 2 tablespoons canola (or saffron) oil

- For the orange scented gravy:
- 1 to 2 cups chicken broth

- 1/2 cup orange juice

- 3 tablespoons flour

- 1/3 cup madeira wine

- Salt and pepper to taste
