A great Salad, not only in taste but wonderful eye appeal. Served with hot garlic bread this salad could be a nice lite entree by doubling the amount of salad greens.
Ingredients
- 1/4 pound fresh spinach

- 8 ounces lowfat mozzarella cheese ball

- 1/4 teaspoon dried oregano, crushed between palms

- 1/4 teaspoon garlic powder

- 4 slices prosciutto, sliced paper thin

- 2 ounces roasted red bell peppers, sliced lengthwise

- 2 cups mixed salad greens

- 2 fresh tomatoes, sliced

- 2 tablespoons balsamic vinegar
