There are many variations on the recipe for mulligatawny soup. This one uses chicken or turkey as the meat and mixes in a multitude of other flavors.
Ingredients
- 3 medium carrots, peeled and sliced

- 1 cup cauliflower flowerets

- 6 cups chicken or turkey stock

- 1 medium onion, chopped

- 2 ribs celery, chopped

- 1/4 cup butter

- 1/2 cup unsweetened apple sauce

- 2 tablespoon curry powder

- 1 teaspoon salt

- 3 cups diced chicken or turkey

- 1 tablespoon lemon juice

- 1/2 cup heavy cream
