Neapolitan Spaghetti Sauce

Relatively simple to assemble, this Neopolitan spaghetti sauce can be used when you are in the mood for something not so complicated. The flavors are unique to the sauce and great with any type of pasta.
 

Ingredients

  • 2 onions, sliced thin
  • 2 cloves garlic, mashed
  • 1/2 cup olive oil
  • 1 1/2 pounds finely ground beef
  • 2 1/2 cups tomato juice
  • 1 1/2 cups tomato puree
  • 1 can italian tomato paste
  • 4 hot chili peppers
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 12 stuffed green olives, sliced

Directions

  1. 1. Brown onions and garlic in oil. Add meat and brown slowly.
  2. 2. Heat tomato juice, puree and paste in a deep kettle; add meat mixture, chili peppers, salt, pepper and sugar. Let simmer for 30 minutes or until thick.
  3. 3. Remove chili peppers and add olives. Let simmer for an additional 10 minutes.
  4. 4. Serve with spaghetti topped with grated Parmesan cheese.
