Nutmeg Cookies with Buttercream Frosting

The tastes and smells of the holiday season can be yours with these nutmeg cookies with buttercream frosting.
 

Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 2 3/4 cups all purpose flour
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • For the buttercream frosting:
  • 6 tablespoons butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
  • 2 or 3 tablespoons heavy cream

Directions

  1. 1. Combine the butter with the granulated sugar and brown sugar; whip with an electric mixer until fluffy. Add the vanilla and egg; beat well.
  2. 2. Stir in the flour, nutmeg and salt by hand using a wooden spoon or fork. Cover the dough and chill in the refrigerator for two or three hours.
  3. 3. Preheat oven to 350 degrees F.
  4. 4. Shape the dough into mini logs (bars) that are 1/2 inch in diameter and about three inches long. Place the cookies on an ungreased cookie sheet about two inches apart.
  5. 5. Bake for 11 to 16 minutes or until light golden brown (some ovens vary).
  6. 6. Let cool on the sheet pan until firmed than transfer to wire racks to cool completely.
  7. 7. While the cookies are cooling make the frosting by combining the butter, powdered sugar, vanilla and heavy cream. Beat well, adding more cream if necessary to reach spreading consistency.
  8. 8. Spread the frosting over the tops of the cookies and lightly dust with nutmeg or cinnamon if desired.
