Ingredients
- 8 ounces rice vermicelli noodles (thick or thin),

- 3 tablespoons vegetable oil for stir frying)

- 3 cloves fresh garlic, peeled and minced

- 1/4 cup fish sauce (or to taste)

- 1/4 cup sugar

- 1 tablespoon paprika

- 6 tablespoons thai chili sauce

- 1 egg, beaten

- 1/2 pound tofu, shrimp or chicken

- 1 cup bean sprouts

- 6 lime wedges for garnish

- 1/4 cup chopped scallions for garnish
