Using eggs as the thickener and substituting peanut butter and milk for the cheese and beer, this peanut butter rarebit is rated K for kids (and sometimes adults too).
 

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 6 tablespoons peanut butter
  • 1 teaspoon salt
  • 4 slices toast

Directions

  1. 1. Beat eggs slightly, add milk, peanut butter and salt.
  2. 2. Cook in double boiler for 12 minutes, stirring regularly.
  3. 3. Pour over hot buttered toast and serve.
