Meaty but remarkably tender, Pickled beef tongue and heart is absolutely delicious. Serve with artisan mustards and bread or crackers.
 

Ingredients

  • 1/4 teaspoon msg (monosodiumglutamate) optional
  • 2 quarts water
  • 1 cup salt
  • 2 tablespoons sugar
  • 2 cloves garlic, chopped
  • 1/2 teaspoon paprika
  • 1/2 tablespoon pickling spices
  • 1 beef tongue

Directions

  1. 1. Dissolve the msg in 1/2 cup warm water.
  2. 2. Add the remaining water, salt, sugar, garlic, paprika and pickling spices.
  3. 3. Place the tongue in a crock and cover with liquid. Cover with a plate and weight down so that tongue remains covered.
  4. 4. Let stand for three weeks, turning occasionally.
