Try this Filipino favorite made with pork and chicken.
Ingredients
- 3 to 4 pound chicken

- 3/4 pound pork steak (with fat)

- 2 teaspoons sugar

- 4 tablespoons sunflower oil

- 5 tablespoons cider vinegar or wine

- 4 plump garlic cloves, crushed

- 1/2 teaspoon black peppercorns, crushed lightly

- 1 tablespoon light soy sauce

- 4 bay leaves

- 1/2 teaspoon annatto seeds, soaked in 2 tablespoons boiling water

- Salt to taste

- For the plantain chips:
- 1 or 2 large plantains and/or 1 sweet potato

- Vegetable oil for deep frying
