Here's a pleasant twist on an old favorite; an excellent pumpkin cheesecake recipe for Halloween and the fall holidays, or really, any time of year.
 

Ingredients

  • For crust:
  • 1 1/2 cups graham crumbs
  • 5 tablespoons butter, melted
  • 1 tablespoon sugar
  • For filling:
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin
  • 3 eggs
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • Whipped cream

Directions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Mix crust ingredients together until just coated and crumbly. Press onto the bottom and 2/3 up the sides of an eight inch spring form pan. Bake for five minutes. Remove from oven and set aside.
  3. 3. Combine cheese, sugar and vanilla in large bowl; mix until smooth with an electric mixer. Add pumpkin, eggs and spices, beat till smooth and creamy.
  4. 4. Pour into the crust and bake for 60 to 70 minutes. Allow the cake to come down to room temperature and then refrigerate.
  5. 5. After it has thoroughly chilled remove the pan sides and cut.
  6. 6. Serve with whipped cream.
