Pumpkin isn't just for Thanksgiving any more; this quick and delicious pumpkin muffin recipe being a case in point.
 

Ingredients

  • 1 cup unbleached flour, sifted
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup vegetable shortening
  • 2/3 cup sugar
  • 1 large egg
  • 1/2 cup canned pumpkin, mashed
  • 2 tablespoons milk

Directions

  1. 1. Sift together flour, baking powder, salt and cinnamon; set aside.
  2. 2. Using an electric mixer at medium speed, cream together shortening and sugar until light and fluffy. Beat in the egg.
  3. 3. Combine the pumpkin and milk in a small bowl.
  4. 4. Add the dry ingredients, alternating with pumpkin mixture, to the creamed mixture, stirring well after each addition.
  5. 5. Spoon the batter into paper lined 2 1/2 inch muffin pan cups, filling 2/3rds full.
  6. 6. Bake in 350 degrees F oven for 20 minutes or until golden brown.
