Ingredients

  • 1 1/2 pounds quince
  • 2 1/2 cups water
  • 2 tablespoons lemon juice
  • 3 cups sugar

Directions

  1. 1. Wash, pare and core quinces. Add water to parings and cook for 30 minutes.
  2. 2. Grate or grind quinces (or slice very thin).
  3. 3. Weigh pulp and use one pound. Add lemon juice and strained liquid from parings.
  4. 4. Cook until tender, add sugar and cook until syrup is thick.
  5. 5. Pour into sterilized jars and seal.
