Ingredients
- 4 chicken bullion cubes

- 5 cups water

- 4 large ripe tomatoes; peeled, seeded and chopped

- 2 cucumbers; peeled, seeded and diced

- For the seasoning base:
- 1 teaspoon kosher salt

- 4 cloves garlic, minced

- 2 anchovy filets (optional)

- 1/2 teaspoon ground cumin

- 2 tablespoons fresh parsley, chopped

- 2 tablespoons fresh basil, chopped

- 2 tablespoons fresh tarragon, chopped

- 4 slices stale (hard) bread, cubed with crusts removed

- For the body:
- 1 red bell pepper, seeded and chopped

- 1 red onion, peeled and chopped

- 1 jalapeno pepper, seeded and chopped

- 1 ripe but slightly firm avocado; peel, remove the pit and dice

- 1/2 teaspoon black (or white) pepper

- 2 tablespoons fresh lemon juice

- 2 tablespoons balsamic vinegar

- Extra virgin olive oil, best quality, as needed
