Here is an Irish soda bread variation that incorporates whiskey into the loaf and as a glaze prior to baking. If you leave the whiskey out you have a basic recipe for two loaves of honey-sweetened soda bread.
Ingredients
- For the bread:
- 4 cups all purpose flour

- 1 teaspoon salt

- 1 teaspoon baking soda

- 1/4 cup butter, chilled

- 1 cup raisins (or currants)

- 1/2 cup honey

- 1/4 cup buttermilk

- 2 tablespoons whiskey

- For the glaze:
- 2 teaspoons irish whisky

- 2 teaspoons milk
