This sweet and sour asparagus salad is an excellent way to start a meal. When you cook the asparagus be sure not to over cook it. Or, for extra crunch, leave it raw.
Ingredients
- 1 pound fresh asparagus spears, woody lower stems removed

- 6 slices bacon

- 1/4 cup red wine vinegar

- 1/4 cup water

- 4 teaspoons sugar (or substitute)

- Salt and black pepper to taste

- 2 green onions, finely chopped

- 2 hard cooked eggs, peeled and sliced

- 6 cups red leaf lettuce; washed, drained and chopped
