Ingredients

• For simple syrup:
• 2 cups sugar
• 1/8 teaspoon baking soda
• 2 cups water
• For steeping:
• 6 regular tea bags (use green tea or other types if you like)
• 6 cups cold water
• Lemon slices for garnish
• Fresh mint leaves for garnish

Directions

1. 1. Note: Simple syrup is used a lot in the south. It’s called simple syrup because it’s simply equal amounts of sugar and water. Sometimes for cooking its brown sugar and water; usually granulated sugar is used for tea but use whatever kind you like. Baking soda is added to the simple syrup in this recipe to help eliminate any bitterness in the tea.
2. 2. Put the sugar and baking soda in a 4 quart pot and pour the water over them. Heat to boiling, stirring occasionally. Cook until the sugar is completely dissolved; remove from heat.
3. 3. Place the tea bags in a large container and pour the boiling water over the tea bags. Cover and steep for 15 minutes. Take the tea bags out (do not squeeze them).
4. 4. In a two quart pitcher combine the tea mixture and cold water. Chill in the refrigerator.
5. 5. Serve over ice with a lemon slice and mint leaves.
