An excellent blend of ginger and rice make this recipe for Thai jasmine rice salad an excellent meal starter or a light lunch on its own.
Ingredients
- 8 tablespoon fish sauce

- 1/4 cup fresh lime juice

- 3 tablespoons brown sugar

- 3 tablespoons chopped fresh ginger

- 1/4 cup chopped scallions

- 1/4 cup raisins

- 1/4 cup toasted walnuts

- 8 ounces cooked chicken white meat, shrimp or tofu; chopped

- 4 cups cooked jasmine rice, cooled fresh cilantro for garnish
