Tuna aspic (or molded gelatin salad) makes a perfect appetizer or buffet item. Fits perfectly into any meal.
 

Ingredients

  • 1 can (7 ounces) tuna
  • 1 hard cooked egg, chopped
  • 1/4 cup stuffed olives, chopped
  • 1/2 tablespoon onion, minced
  • 1 packet unflavored gelatin
  • 1/2 cup boiling water
  • 1/2 cup ice cold water
  • 1 cup mayonnaise
  • Lettuce
  • Parsley, chopped for garnish

Directions

  1. 1. Mix the tuna with the egg, olives and onion; stir thoroughly.
  2. 2. Dissolve the gelatin in the boiling water; add the ice cold water, mix to combine. Gradually add the mayonnaise, stirring constantly. Fold into fish mixture.
  3. 3. Transfer into mold and chill until firm.
  4. 4. Unmold onto a bed of lettuce and garnish with copped parsley.
