Directions

1. 1. Sift the flour, cinnamon, baking soda, cloves and salt into a medium bowl. Use a pastry blender to cut in the butter until the mixture resembles fine crumbs. Stir in the sugar, molasses, lemon zest and egg to form a stiff dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
2. 2. Preheat the oven to 375 degrees F. Prepare a sheet pan with cooking spray.
3. 3. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch. Use a four inch heart-shaped cookie cutter to cut out the cookies. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used. Transfer them to the prepared cookie sheet, placing them about one inch apart.
4. 4. Bake for 10 to 15 minutes or until lightly browned. Remove from oven and transfer to wire racks to cool.
5. 5. Use various colored candy writers to pipe a message onto each cookie.
