This vegetable soup calls for chicken stock which keeps it from being vegan. However, it has plenty of vegetables, including tomatoes and cbbage for sweetness, to provide a nice mix of healthy flavors.
Ingredients
- 1/4 cup olive oil

- 1/2 cup onion, peeled and diced

- 1/2 cup celery, diced

- 1/2 cup carrot, peeled and diced

- 1/2 cup green bell pepper, chopped

- 4 cups chicken stock

- 1/2 cup cut green beans, drained

- 1 cup fresh tomatoes, chopped

- 1/2 cup cabbage, shredded

- Salt and pepper to taste
