The original version of Welsh rarebit, this recipe uses a roux for the foundation and beer for the liquid component.
 

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon all purpose flour
  • 1 cup cheddar cheese, grated
  • A pinch of salt
  • A little cayenne
  • 1/4 teaspoon english mustard
  • 2 tablespoons beer (more if needed for proper consistency)
  • A few drops of worcestershire sauce
  • 2 slices of bread

Directions

  1. 1. Melt the butter in a sauce pot over medium heat, stir in the flour. Cook for three minutes, stirring constantly.
  2. 2. Blend in the rest of the ingredients except the bread. Cook gently, stirring all the time until thick and bubbling. Remove from heat.
  3. 3. Preheat the grill (broiler). Toast the bread on both sides.
  4. 4. Spread the cheese mixture over and return to the grill until golden and bubbling.
  5. 5. Serve hot.
